Vanilla-Macerated Berry Shortcake #FoodieExtravaganza

Foodie Extravaganza is where we celebrate obscure food holidays or cook and bake together with the same ingredient or theme each month. Posting day for #FoodieExtravaganza is always the first Wednesday of each month. If you are a blogger and would like to join our group and blog along with us, come join our Facebook page  Foodie Extravaganza . We would love to have you! If you're a spectator looking for delicious tid-bits check out our  Foodie Extravaganza Pinterest Board ! This month Kelly of Simply Inspired Meals is hosting the group as we shine the spotlight on strawberries. She wrote: "May is National Strawberry Month. Join us in creating recipes featuring strawberries as the star!" It was a timely invitation as I had just made a berry shortcake, by request, for my husband's birthday. Well, it was one of his requested treats. In any case, here's the  strawberry line-up from the #FoodieExtravaganza bloggers... Barbecued Strawberry Chicken From   Making Mira...

Vanilla-Macerated Dragonfruit Shortcake #RecipeTesting #FreakyFruitsFriday #MelissasProduce #Sponsored

This is a sponsored post written by me on behalf of  Melissa's Produce . I received complimentary product for the purpose of review and recipe development, but all opinions are honest and they are my own.  This page may contain affiliate links. You can read in my recipe post - Passionfruit-Vanilla Panna Cotta - how  Melissa's Produce   ended up sending a selection of their ' Freaky Fruits ' to me and some of my Festive Foodies pals. And, because there was just too much goodness to fit into a two-day event, I am sharing some bonus recipes as I recipe test for October's #FreakyFruitsFriday. Dragonfruit Dragonfruit grows on a vining cactus and has a vibrantly colored rind that houses a juicy flesh flecked with tiny, edible black seeds. The fruit is similar in texture to a cantaloupe or a kiwi; its flavor runs the gamut from sweet to tart to virtually non-existent. I prefer ones that are somewhere in between the first two. But, honestly, I haven't...

Recipe Testing: Sour Cream Strawberry (Pound) Shortcake

Remember: I'm recipe testing for an upcoming Strawberry Shortcake event? You can read about my first attempt with my Laminated Biscuit Strawberry Shortcake . Since people had mentioned a pound cake version, I decided to try that. And instead of whipped cream, I made a sweetened sour cream. I always forget that my Precise Kitchen Elf doesn't like sour cream. I mean, really, what's not to like? But, somehow, he doesn't like it and he can discern if anything he's eaten has even been in proximity of sour cream. It's crazy. So, needless to say, this wasn't a favorite with him. But my husband liked it so much he had a second helping. Sour Cream Strawberry (Pound) Shortcake Ingredients Sour Cream Pound Cake 1 C (2 sticks) butter, softened + some for buttering baking pan 3 C orgranic granulated sugar 6 large eggs 3 C flour 1/4 t baking soda 1 C organic sour cream 1 t pure vanilla paste Macerated Strawberries 2 C organic straw...

SRC Reveal: Pomegranate Pound Cake

It's time for Group B's first  Secret Recipe Club   reveal of 2015; we were on break last month. This month I was assigned to The Harried Cook , a blog written by Marsha. Marsha writes that she's "a wife, mother, daughter, friend, cook, baker and a lover of good food." She's been scribbling down recipes on pieces of paper, napkins, notebooks, text books, mobile phone memos and pretty much anywhere possible for as long as she can remember. She originally wanted to call her blog "Cook. Eat. Sleep. Repeat." but decided that The Harried Cook was more apt. She admits: "...if you know me well, you will not that I am incapable of NOT being harried." The curse of motherhood, I think.  inspired by The Harried Cook's  Pomegranate Pound Cake Ingredients Pound Cake 3/4 C butter, room temperature 1 C organic granulated sugar 4 eggs, separated 1 t pure vanilla extract zest from one organic lemon 1-1/2 C flour 1/8...

Matcha-Yuzu Pound Cake

Just in case you've never made a pound cake, don't be shocked - it uses a pound of butter, a pound of flour, and a pound of sugar. Yikes! Once you get over your surprise, get baking because this is truly delightful. I added in a little matcha green tea powder and subbed some yuzu sake for the usual vanilla to create this delicious pound cake. Ingredients 1 pound (3 1/4 C) white whole wheat flour 1 pound (4 sticks) softened butter, plus more for pans 1 pound (2 C) organic granulated sugar 4 t matcha green tea powder 1 T yuzu sake (you can use vanilla extract here, or any other liqueur you desire) 9 large, room-temperature eggs  Procedure Preheat oven to 350 degrees F. Butter 4 mini loaf pans.  Cream butter and sugar with a mixer on high until pale and fluffy, approximately 6 to 8 minutes. Reduce speed to medium, scrape down the sides of the bowl, and stir in the yuzu sake. Beat eggs and add to the butter-sugar mixture. Fold in the flour in 3 ad...
