Staying Motivated to Cook: Our Favorite Indian Dishes + Pork Biriyani

I really wasn't cognizant of how much the boys motivated me to cook - multiple dishes, appetizers, and even desserts. Now that it's just me and Jake, a salad has sufficed for dinner and a peanut butter and jelly sandwich was all I made for lunch the day after we dropped off R. Yikes. I am in need of empty nest cooking motivation! Jake wanted to invite a departing co-worker over for dinner and it was a great reason for me to create multiple dishes in one evening. It turns out the friend never showed up - he had broken his foot! - so we had lots of leftovers and I delivered dinner to my parents the following day. The last time Andrés came over for dinner, I served a Kimbap Sushi Hybrid along with Hawaiian Saimin. When I asked Jake what I should make, he said... Butter Chicken Done. Here's  a previously posted Butter Chicken recipe .  Palak Paneer Whenever I make Indian food, my favorite is Palak Paneer . But for the centerpiece of the table, I decide to make a biriyani. Us...

Three Chile Mole #Sponsored

This is a sponsored post written by me on behalf of Selefina spices. Complimentary product was provided for this post and this page may contain affiliate links. However, all opinions expressed here are my own. Years ago I attended two mole-making classes at a local shop. And, while I am grateful to know how to make mole, I don't do it that often. But when a contact from  Selefina * asked me if I would like to sample their new line, I looked through the website and decided to give it a whirl with their products. Selefina is new venture from the people behind Adagio Teas. They have used their experience in global sourcing and making connections to find high quality spices and seasonings. And by purchasing in bulk and using their own brand for labels, costs are kept lower for the consumer. It's a win-win and, from what I've tried, the products are amazing. Stay tuned for more posts, but this recipe uses several of their items, including three different dried chiles, hence ...

Brazilian-Inspired Pernil and a Punny Ride #MoviesandMunchies

This month the Movies and Munchies group is watching The Jungle Cruise , hosted by Kelley of Simply Inspired Meals . You can read her invitation here .  Unlike Kelley, I didn't grow up going to Disneyland. I mean, I have been to Disneyland, but I don't love crowds and I am not a huge fan of rides. I don't think my husband has ever been to Disneyland! That doesn't mean we deprived our boys, however; they have been several times with my parents. This is from one of their trips there, in 2013, I think... And they told me that they liked the animatronics on the Jungle Cruise ride. In fact, the photo below might actually be from the ride. Anyone? In any case, this was from their trip in 2011. So, it's been awhile. On the Screen image from disneyplus (how I watched the movie!) I wasn't expecting too much when we started the movie. I mean, it's a movie based on a ride, right? That's kind of like movies based on a game. Looking at you, Clue  or Battleship . No...

An Immigrant Experience + Sticky Sesame Spare Ribs #FoodieReads

This is another book that was devoured, cooked from, but never posted last year -  Mango and Peppercorns: A Memoir of Food, an Unlikely Family, and the American Dream by Tung Nguyen, Katherine Manning, Lyn Ngyuen, and Michelle Bernstein. Amazon certainly knows how to suggest what I like. Seriously. Food. Immigrants. Food. I'm all in. On the Page Not being from Miami - in fact, never having visited Miami - I was completely unaware of the legendary restaurant that is Hy Vong. This is the story of Tung and Kathy - their friendship, partnership, and family - and the American immigrant experience. It is also a tale of the ripples of war as Tung came to American with all of the emotional scars of the Vietnam War. This memoir is told in alternating perspectives from Tung, Kathy, and Tung's daughter, Lyn. One of my best friends from high school was adopted from Vietnam and, after she returned and found her birth mother, I remember her telling me the story of bringing her here...

Pork and Beans #ImprovCookingChallenge

Welcome to the October  2021  Improv Cooking Challenge . This group is headed up by Nichole of  Cookaholic Wife . And I haven't been very consistent, but I love the idea of the group, so I will try to be better in the coming months. The idea behind Improv Cooking Challenge: we are assigned two ingredients and are challenged to create a recipe with those two things. This month's items: pork and molasses. Here's what the crew is sharing with those ingredients... Molasses Roasted Pork Tenderloin by A Day in the Life on the Farm Baked Beans and Cottage Ham by Palatable Pastime Pork and Beans by Culinary Adventures with Camilla Pork and Beans I started with dry beans.  Click for a how-to:  here . You can do this the night before and keep in the fridge till you're ready to use them.  If you are using pre-cooked beans, I think I had about 4-5 cups. Also, I like adding espresso or coffee to my baked beans for added flavor. If you don't drink coff...
