Here we are the August 2021 edition of the Cake Slice Bakers. For 2021; we are baking from  Little Everyday Cakes: 50+ Perfectly Proportioned Confections to Enjoy Any Day of the Week  by Candace Floyd. * I can't believe that we're already halfway through the year. In many ways 2020 dragged on as the shelter-in-place orders continued month after month; on the other hand, it was a completely blur because there weren't milestones to mark the passage of time. In this group, we are given a selection of three cake recipes. We each choose one cake to bake, and then on the 20th - never before - we all post about our cake on our blogs. This time around,  Simona of  Briciole   is the host for our bi-monthly book group  Cook the Books . Don't get me wrong: I like a good mystery and did enjoy the book. But I didn't love it though I really wanted to. I loved the concept of the book - that the right books can soothe our souls, improve our lives, and teach us things that we desperately need to know.  "Becoming a reader is a change for the better. Butterscotch Pecan Wafers #FoodieReads

A good friend of mine lent me this book -  American Cookie: The Snaps, Drops, Jumbles, Tea Cakes, Bars & Brownies That We Have Loved for Generations by Anne Bryn. Perfect timing, too, because it's definitely cookie season in my kitchen. From Thanksgiving till New Year's I bake a lot of cookies. I mean a lot. And I certainly have my annual favorites that include gingerbread of all kinds, chocolate chip cookies , snickerdoodles , etc. But sometimes you just have to mix it up. Funny story...I handed this book to my crew with a stack of sticky notes and asked them to mark some favorites. It came back to my desk with Coconut-Lime Cupcakes and Bourbon Balls flagged. Ummmm...those aren't cookies!  "They are in the cookie book," they retorted. Well, I couldn't argue with that. Though I was still looking for their cookie selections. Though I still haven't felt the chill of autumn in the air here on California's central coast, we are sharing recipes with Fall's darling - the apple. Christie of A Kitchen Hoor's Adventures wrote: "Fall is just around the corner, but apples are coming into season. From sauces and breads to salads and side dishes, apples are completely versatile." Pecan-Crusted Maple-Mustard Roasted Chicken #NationalPecanDay

Pecan-Topped Brussels Slaw #NationalPecanDay

I had initially planned to share this with the Festive Foodies for National Pecan Day. But then I opted for pecan-crusted chicken thighs. But this was the sidedish that evening and it was easy and tasty. Ingredients 1 pound Brussels sprouts 3 T olive oil 2 T vinegar (I used apple cider vinegar) 2 T mustard (I used a spicy brown mustard, but you can use yellow) 1 t maple syrup 2 cloves garlic, peeled and pressed 2 T bleu cheese or gorgonzaola 1 C whole, raw pecans freshly ground salt freshly ground pepper Procedure Trim the stems of the Brussels sprouts and slice them as thinly as you can. I use a mandolin slicer for this. Chop 3/4 C pecans and leave the remaining 1/4 C whole. In a large mixing bowl, whisk together the oil, vinegar, mustard, maple syrup, and garlic to form a dressing. Add sliced Brussels sprouts to the dressing and toss to coat. Let stand for at least 15 minutes for the sprouts to soften a bit. Stir in bleu cheese and chopped peca...
