Classic and Simple: Peanut Butter Cookies #CulinaryCam

These peanut butter cookies were a family affair when we filmed this for the Culinary Cam YouTube channel. Here's a behind the scenes shot as they heckled me for making Peanut Butter Miso Cookies . Sometimes you just need to go back to the basics, right? And I love that these can be made in about 30 minutes with ingredients you probably already have in your kitchen. Ingredients  makes approximately 20 cookies 2/3 cup organic peanut butter (I used crunchy) 1/2 cup (1 stick) butter, room temperature 3/4 cup organic dark brown sugar, lightly packed 1/3 cup organic granulated sugar plus more for rolling 1 egg 1-1/2 cups flour  1/2 teaspoon baking soda Also needed: baking sheet with parchment paper or silicon mat; cookie scoop, optional; fork Procedure Preheat oven to 350 degrees Fahrenheit. Peanut Butter-Red Miso Cookies

When I was doing some research for a collaboration with Dineen Vineyards, I came across their recipe for Peanut Butter-Miso Cookies . All of those words make my little foodie heart go pitter-patter. But I didn't have white miso and tried it with red miso.  Even for this savory-leaning gal, it was too much. So I ended up dipping the cookies in chocolate to mask the overpowering miso flavor. Then I set about testing different proportions for peanut butter to miso. I even added in some tahini in one batch.  Even though I liked this version, my peanut gallery still responded: Why do you have to try to put together peanut butter and miso?!? Those really don't go well. Maybe I should get some white miso and try that. "Maybe you should just stop with the miso cookies!"  Well, fine. Some people might like them. Roasted Peanut-Topped Peanut Butter Cookies

For the holidays my mom received pounds and pounds of raw peanuts from her friend who has a peanut farm in Virginia. I considered making peanut butter, but after I roasted them, my family was just eating them by the handful. I was lucky enough to hide away a few cups and used some to top my favorite cookie: peanut butter cookies! Ingredients  makes approximately 20 cookies Roasted Peanuts 5 to 6 cups raw, shelled peanuts Also needed: baking sheet, mixing bowl, cooling rack that the peanuts don't fall through Peanut Butter Cookies 1 stick (1/2 C) butter, softened 3/4 cup creamy peanut butter 3/4 cup organic granulated sugar 1 egg 1/2 teaspoon pure vanilla extract 1-1/2 cups flour 1/2 teaspoon baking powder 3/4 teaspoon baking soda coarse sugar for garnishing oven roasted peanuts for garnishing Procedure Roasted Peanuts Preheat oven to 350 degrees Fahrenheit.
