Thai-Inspired Chicken Satay Skewers with Peanut Sauce

I will be sharing more about the 2020 Sin Banderas Rhône Rosé for the March 2021 #WinePW event that focuses on the wines of Washington State's Yakima Valley. Stay tuned for more on that next weekend, but I am going to be posting several of my recipes ahead of time. The participating wineries  were so generous that I have more seven pairings to share. Seriously. Seven. So, I'm starting now and will continue throughout the entire month of March. I love pairing  Rosés with chicken. I paired their 2019 with my  Shichimi Togarashi-Spiced Fried Chicken . But this 2020 was more delicate and wanted a dish that was still subtly spiced that didn't overpower the mouthfeel with crisped panko crumbs. I settled on a Thai-inspired chicken satay with peanut sauce. Just be sure to start this the day before you want to serve because the chicken marinates overnight. This is my second month participating in a baking group called Bundt Bakers. A Plate of Creepy Crawlies and Other Ghoulish Gobbles #FoodNFlix

This month Kimberly from  Coffee and Casseroles  is hosting this month's edition of #FoodNFlix. Read her invitation:  here . She asked us to watch  The Addams Family or Addams Family Values.* It seems an appropriate month for good, ghastly fun; it's Halloween month and they are releasing a new (animated) Addams Family movie this month. And you have plenty of time to join in the fun, if you wish. Posts aren't due to Kimberly until October 30th. I mentioned the assignment and R said that he had just seen that DVD. So, he dug it out of the cabinet for me and all four of us sat down to watch it. D kept asking, "What is this movie? Why are we watching it?" Sadly, I think that he inherited my sense of humor...or rather lack of one. But the rest of us didn't complain too much and might have even enjoyed it. Triple Nut Butter Bourbon Cookies

This is how inspiration works in my kitchen. Last night, it resulted in these cookies. I was dubious that the ingredients would actually result in a cookie, but they did! One of my best friends emailed me this photo. Another one of his friends had scribbled this down at swim practice. The only words in the email: "If you want to try…they are soooooo goooooooood!!!" Okay. Sold. So, I went to the website she references and found a slightly different recipe . Then, because I can't follow a recipe to save my life - well, I probably could to save my life - I slightly adapted it. I used three different kinds of nut butter, swapped out the vanilla for bourbon, and added hemp seeds. Ingredients 1/2 C bourbon pecan peanut butter (I bought mine at Mouth ) 1/2 C raw almond butter 1/2 C raw peanut butter 1/2 C honey (I used pine honey) 1 T bourbon 2 eggs, room temperature ½ t baking soda 2 T hemp seeds 1 T instant coffee 1/3 C semi-sweet chocolate chips ...
