Lentil-Chestnut Stuffed Grape Leaves for #HandCraftedEdibles

In an effort to make all of my holiday gifts this year, we are sharing recipes for hand-crafted edibles. Over the course of twelve weeks, we'll be sharing recipes that you can make at home to give to friends and loved ones, or things to serve at holiday parties. Mujadara v.2

We thoroughly enjoyed the Mujadara I made for Cook the Books , but we did think it was too sweet. So, I decided to make a v.2. For this version, I only caramelized one onion...and added a fennel bulb to the mix. Also, I added in some braising greens. It was perfect! Ingredients 1/4 C olive oil 1 large onions, peeled and thinly sliced 1 medium fennel bulb, trimmed and thinly sliced 1 t organic coconut sugar 1 t ground cumin 1 C brown lentils 1/2 C organic brown basmati rice 2 C braising greens  1 t ground sea salt chopped fresh parsley lemon wedges for serving olive oil for serving Procedure Heat oil in a large, flat-bottom pan. Add the onions, fennel, coconut sugar, and cumin. Cook, stirring occasionally until the onions are deeply caramelized, approximately 45 to 60 minutes. Do not rush this step. Sort through the lentils. Add water to cover the lentils completely by at least an inch. Bring to a boil over medium heat. Reduce heat to a simmer and cove...

Dal Bhat {Nepalese Lentil Curry}

Another of the Nepalese dishes we tried at the Taste of the Himalayas was a must: dal bhat , Nepalese lentil curry. Yum! 1-1/2 C red lentils, washed and drained 3 C organic chicken stock, or water 1/2 t turmeric dash of ground coriander dash of ground cumin dash of ground cloves dash of ground cinnamon dash of ground cardamom freshly ground pepper freshly ground salt 1 T mustard 1/2 onion, diced rice to serve In a large souppot, cook the onions in a splash of oil until they are softened and translucent. Add the lentils and stir in the spices, except the salt and pepper. Add the mustard and chicken stock. Bring to a boil, then reduce heat and simmer, covered, until the lentils are soft and beginning to fall apart - approximately 30 minutes. Season to taste and serve with cooked rice.

Cooking Around the World: Curry and Coconut Chutney {Micronesia/Palau}

And, for that, I'm calling this country done and moving on. I cooked a Palauan feast years ago for a friend's birthday. Micronesia consists of the Caroline Islands Archipelago in the western Pacific Ocean. Initially owned by Spain, Germany purchased the islands before the turn of 19th Century. Japan later occupied the region. Then, in the late 1980s, 600 islands and atolls became self-governing in free association with the United States. On the food front, they grow: black pepper, tropical fruits and vegetables, coconuts, cassava (tapioca) and pigs. They export fish, bananas, and black pepper. Palauan food, at least the dishes I selected, were a blend of spicy and sticky and in need a cooling counterpart. Fresh coconut chutney was the perfect foil. Fresh Coconut...
