Lactation Cookies v.2: Gluten-Free Chocolate Coconut Mounds

A couple of years ago a friend of mine had a baby and I whipped up a batch of Lactation Cookies for her. She just had Baby v.2; so I decided to make Lactation Cookies v.2. Just delivered them this evening. Hope she likes them. "Mom, may I try a cookie?" They're lactation cookies. "What's lactation?" Lactation is how moms feed their babies milk. "Wait...what do the cookies do?" They help moms produce more milk for the baby...at least that's the theory. Do you want to try one? "No, I don't want to lactate." Okay, more for her. Cookies for a Pirate {Lactation Aid}

Who knew that there is such a thing as  Lactation Cookies ? I certainly didn't remember that from the 4 (combined) years that I was pregnant and lactating with my boys. But a good friend - and new mom - joked that she had an assignment for me. Well, she was joking, but I am always up for a culinary challenge. So, I started with one of the recipes from the justbreastfeeding website - the lactation cookies for nut lovers. As for the post title...well, we call her adorable little boy "the pirate" because he sometimes views the world around him, grumpily, through one eye. Did I mention that he's adorable?!?
