If you've following my blog recently, you'll know that I just bought an e-reader - read about that in The Paris Architect, Three Lives of a Roasted Chicken, and an E-Reader - and I'm warming up to it. Though I have had to figure out balancing the number of titles I'm allowed to have checked out to my Kindle Unlimited account, I might even say that I like the convenience of having books in the cloud instead of on my nightstand. Gasp. And I will also readily admit that I added this book to my reading list simply because its cover is pretty! It All Comes Back to You by Beth Duke.* Gasp, again. On the Page Beautiful cover aside, this book actually inspired me to wince and cringe in response to the characters' actions. On the surface it's a relatively sweet tale of two women whose lives intersect because one is a caregiver at a retirement facility while the other is a resident. Welcome to the first 2020  Improv Cooking Challenge . This group is headed up by Nichole of  Cookaholic Wife . And I haven't been very good about participating, but I love the idea of the group, so I will try to be better in the coming months. A Literal Cake of Cheese and Handmade Crackers #BakingBloggers

Today, the Baking Bloggers, led by Sue of Palatable Pastime , are sharing cheesecakes. Don't get me wrong, I love cheesecakes - so much so that we served cheesecakes at our wedding instead of regular cake - but I had seen a cake made of cheese wheels and really, really wanted to make one. And I thought this might be the perfect recipe to share with the group. I did email to make sure it wasn't too far outside of her vision in picking the theme and she responded, "...as long as you bake some part of it." Well, I handrolled and baked the crackers. Pesto-Layered Cashew Cheese {Vegan}

Ingredients For the Cheese 1 C raw cashews, soaked overnight and drained juice of 1 lemon, approximately 1/3 C 1/3 C water 1 T organic coconut oil 1 t raw apple cider vinegar dash of salt For the Pesto 1  C fresh basil leaves, torn 2 garlic cloves 1/3 C raw pistachio nuts olive oil, as needed 1 t salt To assemble 1 to 2 T sliced tomatoes confit or sun-dried tomatoes To serve 1 T chopped hazelnuts vegan crackers Procedure In a blender, or food processor, blend all of the pesto ingredient together until you have a thick paste. Line a ramekin with plastic wrap. In a blender, or food processor, blend all of the cheese ingredients together until smooth. Spoon part of the mixture into the prepared ramekin. Spoon in a layer of pesto. Lay sliced tomatoes on top of the pesto. Top with remaining cheese. Refrigerate, or freeze, until set. Mine took several hours.
