Here we are at the April Soup Saturday Swappers event. Wendy of  A Day in the Life on the Farm  started this event and, every month, I get a new array of soup recipes to put in my to-try pile. And this month, I am hosting the event. "The winter chill is loosening its grip on the world by now (hopefully)...and our produce is turning Springy. Let's create and share some soups that feature the darlings of Spring. Think fennel, peas, and whatever tickles your fancy," I urged the bloggers. New Potato-Corn Vichyssoise #SoupSwappers

Here we are at the September Soup Saturday Swappers event. Wendy of  A Day in the Life on the Farm  started this event and, every month, I get a new array of soup recipes to put in my to-try pile. And this month, Sid of Sid's Sea Palm Cooking is hosting as we explore soups featuring potatoes. Sid writes, "Share your favorite soup that contains potatoes. Baked, Mashed, Red, White, Russets, Sweet.....as long as they play an important enough role in the soup that it wouldn't be the same soup sans potatoes." I thought about all of the soups I love with potatoes: Spring-Kissed Seafood Chowder , Spinach Chowder , and King of Soups . But all of those were cold-weather soups and we are enjoying a warmer than usual Indian summer. So, I decided to make one of my favorite chilled soups for the event. But first, here's what the other bloggers made... An InLinkz Link-up New Potato-Corn Vichyssoise inspired by Laurey Masterton's   The Fresh Honey Co...

Cucumber Gazpacho #KitchenMatrixCookingProject

Here we are at the second #KitchenMatrixCookingProject post for July. This month I picked the dishes with easy recipes to inspire some  al fresco  dinners. My family and I have been taking our meals outside often. We love the fresh air and warmer than usual evenings. It's a great way to spend a meal with those you love. Last week we shared chicken wing recipes ; this week, I picked my favorite chilled soup: gazpacho. You can read more about our project:  here . We'd love to have you join us. And, if you don't have a copy of his cookbook, you can read  his gazpacho matrix online.   The Other Offerings An InLinkz Link-up Green Gazpacho I've made a traditional gazpacho , white gazpacho , but for some reason, I've never thought to make a green gazpacho. This is an amalgam of Bittman's recipes. I took elements from all over this gazpacho matrix to create this tasty cold soup. I used the Cucumber, Grape, Hazelnut as a staring point becaus...

Roasted Asparagus Soup #SoupSwappers

Whenever it's Spring, I find myself cooking with lots of asparagus. And it got me thinking about hosting a Spring soup event for the Soup Saturday Swappers that is organized by Wendy of A Day on the Life on the Farm . I asked to host this month and I wrote: "Winter is loosening its grip on the world...and our produce. Let's create and share some soups that feature the darlings of Spring. Think fennel, peas, and whatever tickles your fancy." I decided to go with asparagus, but first... The Spring Soup Pots An InLinkz Link-up Ingredients 2 to 2-1/2 pounds asparagus, ends trimmed 4 Spring onions, outer layer peeled away  olive oil freshly ground sea salt freshly ground pepper 2 C organic chicken broth 2 T ground almonds organic lemon for garnish Procedure Preheat oven to 400F. Salmorejo Cordobés #SoupSwappers

This year, Wendy of  A Day in the Life on the Farm  kicked off her new group: Soup Saturday Swappers. And this month P. of  The Saucy Southerner   asked us to share some recipes for chilled soups. They are such a great summer dinner. I'm grateful to have a few more recipes to try. When I started thinking about chilled soups, all the usual suspects popped into my mind. I've made  Chilled Pea Shooters , Rabarbersuppe Med Vin (Danish Rhubarb Wine Soup), White Gazpacho , and at least half a dozen different versions of fruit and veggie gazpachos made with peaches , olallieberries , watermelon , cucumbers , Yes, clearly, I'm a gazpacho fanatic. But I didn't want to make a gazpacho as there will be so many from which to choose with the group this month. I decided to go with Salmorejo Cordobés, gazpacho's richer, deeper cousin. This was something that a friend from Spain taught me last year. With its hard-boiled eggs and salty ham topping, it's more of a dinn...
