Camilla's Chicken Adobo

First off, let me lead with the disclaimer that I am sure all Filipinos will tell me that I did it wrong. But it's my kitchen, my adobo, and everyone in my household loved it. So, traditional or not, like your apong's or not, this is a pot of delicious, salty goodness. And it's super-duper easy. We're here on Day 14 of our county's shelter-in-place order. And I have to give a shout-out of gratitude to anyone who has ever given us games and books. They are sustaining us through this. Thank you. So, while the adobo cooked, I played a few games with D. In hindsight, I should have doubled this as we didn't have any leftovers for lunch today. Ingredients serves 4 4 bone-in, skin-on chicken thighs 1 large onion, peeled and diced 4 to 5 garlic cloves, peeled and smashed 1 T olive oil 3/4 C to 1 C soy sauce (I use reduced sodium, but this might still be too salty for some people's tastes, adjust down to 1/2 C, if desired) 1 C vinegar (I use apple...

Roasted Goldenberry Chutney Over Spiced Chicken Thighs #SpringOnThePlate #MelissasProduce #Sponsored

This is a sponsored post written by me on behalf of  Melissa's Produce . I received complimentary product for the purpose of review and recipe development, but all opinions are honest and they are my own.  This page may contain affiliate links. Yellow, sunny dishes have been on my mind - and on my table - since I received a selection of yellow produce from Melissa's Produce *. You can read a little bit more about this #SpringOnThePlate series in an recipe post: Earl Grey Layer Cake with Bergamot Curd . One of the items I received was goldenberries; you read more about those on their website . Also called cape gooseberries or ground cherries, they are  bright, orange-colored fruits that are closely related to the tomatillo. Like tomatillos, they are shrouded in a papery husk called a calyx that must be removed before eating. Slightly smaller than cherry tomatoes, their flavor is reminiscent of the sweet-tart of pineapple and other tropical f...

"Not from the Freezer Section" Irish Chicken Stew

I had a lot on my mind a couple of nights ago and couldn't sleep. Not wanting to toss and turn and wake up Jake, I made my way to the living room, settled in on my bean bag and started streaming a silly little rom-com Leap Year . But Jake woke up anyway and joined me. So, I started it again and we watched it together from start to finish. On the Screen from imdb.com Meet Anna (played by Amy Adams) and her cardiologist boyfriend, Jeremy (played by Adam Scott). Anna is an über-organized, high-functioning stager - someone who makes houses look good for realtors - and thinks that Jeremy is going to propose before he leaves for a medical conference in Ireland. He doesn't. And she decides to take matters into her own hands and rely on an Irish tradition that allows women to pop the question on February 29th. So, she flies to Ireland, but ends up diverted to Wales after extreme turbulence. Then, via tugboat and choppy waters, she ends up in Dingle where she hauls her su...

Château du Cèdre Extra Libre 2018 Malbec + Cider-Braised Chicken Thighs #Winophiles #Sponsored

This is a sponsored post written by me in conjunction with the October #Winophiles event. Wine samples were provided for this post and this page may contain affiliate links. This month the French Winophiles are headed, virtually, to Cahors. Though hosted by Nicole of Somm's Table , Jill of L'occasion was able to line-up some wine samples for the group through the UIVC (Union Interprofessionnelle des Vins de Cahors). Merci beaucoup! I received three bottles: Château du Cèdre Extra Libre 2018 Malbec, Château de Gaudou Le Sang de Ma Terre 2018 Malbec, and Château Lamartine Cahors 2016. All of which were new to me. If you are reading this early enough, join us on Saturday, 19 October at 8am Pacific time for a live Twitter chat. Use #Winophiles so that we can see your comments. Otherwise, take a look at the French Winophiles' virtual trip to Cahors this month... Jane from Always Ravenous explores the Flavors of Fall Paired with Cahors Malbec . Cat...

Maple and Mustard-Glazed Chicken Thighs #FoodBloggerLove

Earlier this month I noticed a fun game posted in the online group #FoodBloggerLove. We claim the last blogger in the comment stream and add our own link. Then we have a week to post an inspired recipe. I was thrilled to claim Ellen of  Family Around the Table . She and I have been in several different blogging groups over the years, so I was familiar with her blog already. But it was great to really dive deep and get to know her better. Meet Ellen! You can find her: on the  web , on  Facebook , on  Twitter , on  Instagram , and on  Pinterest . She is a freelance writer, recipe developer, and former correspondent for the Tampa Bay Times where she wrote a regular TASTE section feature as well as reviewed cookbooks for more than 15 years. And, regarding her blog name, she credits her mom, her kids, and her grandmother for the inspiration. She remembers her grandmother making fresh pasta for dinner, writing, "She was from Italy and a very good cook so...

Paella Party for My Parents #KitchenMatrixCookingProject

My parents' birthdays are five days apart. Well, two years and five days. Kinda funny that Jake and I  also celebrate our birthdays within a week - again, two years and a week. So, our family birthday celebrations are slightly easier to schedule because we have joint dinners for them and for us. This year, my parents were in Hawaii for my dad's birthday; I scheduled a party when they came back. Happy birthdays to Nonna and Nonno! While they were in Hawaii, I asked my mom if they wanted lasagna or paella for their party. She didn't even hesitate...and she didn't ask for my dad's input either. "Paella!" she declared. Perfect timing, too, because I knew I needed to post a paella dish for this week's #KitchenMatrixCookingProject. Before I get to our paella party, here's what the other gals are sharing this week... An InLinkz Link-up For years, my paella pan languished in the cupboard, collecting dust. Then a friend fr...

Poulet au Porto #FantasticalFoodFight

I love the Fantastical Food Fight coordinated by Sarah of  Fantastical Sharing of Recipes . For more information about the event, click  here . I haven't been very good at participating, but this month, I couldn't resist.  Our theme for the month is: Julia Child in honor of her birthday; so the group must be a Julia Child or Julia Child-inspired recipe. The Julia Child Fantastical Food Fight An InLinkz Link-up Poulet au Porto Chicken with Port Wine, Cream and Mushrooms I'll just start with this: this is a very loose adaptation of the version at juliachildsrecipes.com ( here ). Very loose. I was inspired by her recipe, but wanted to have crispy chicken skin...and I didn't have any cognac to set aflame though I am certain that my boys would have loved that detail. In any case, this is my version of a Julia Child recipe; this is not her recipe. For example, she starts with already roasted chicken. I opted to cook my chicken thighs on the ...

Poulet à la Moutarde + Salade de Courgettes #EattheWorld

Here we are in August for another installment of our #EattheWorld project, being spearheaded by Evelyne of  CulturEatz . Here's  her challenge . This month, the country was selected base on who won the World Cup. I think we were all hoping for Croatia as that seemed to be a little more of a challenge. Alas, France prevailed. In February we kicked off the project with  Cuba ; in March we celebrated St. Patrick's Day with a tabletop trip to  Ireland !  Thailand  was our April destination. May had us headed to  Kenya . In June, Evelyne asked us to create a dish from  Sweden   and July was New Zealand . Before I get to my French recipes - yes, I did two because I couldn't decide - take a look at the other offerings...
