At beer halls in Munich, these giant pretzels, which have a similar chew to bagels, are served with softened butter. A note: I had originally planned to make a gluten-free version since Jake is doing a gluten-free, dairy-free experiment. But when I remembered that barley has gluten, I used regular flour and told him he was out of luck. I'll make a gluten-free version with honey soon. Okay, I was supposed to post this for #TwelveLoaves yesterday. But I got my days confused. So, I'm posting today (a day late - boo!), not linking to the party. I'll still make the rounds of the bakers who did know what day they were supposed to post. Sorry, gals. The Jewish breads event inspired me to try my hand at khachapuri , a breakfast bread served throughout Israel. I served it for dinner last night - in the backyard - with some chilled pea soup. Ingredients 1 T active dry yeast 1 T organic granulated sugar 1 C warm water 3 C white whole wheat flour 1/2 C ground almonds 2 T olive oil 1/2 C fresh herbs, minced (I used a mixture of parsley, mint, thyme, and oregano) + more for sprinkling 2 C shaved parmesan cheese eggs (I used duck eggs because I was making large  Khachapuri ) fleur de sel butter for rubbing on the bread Procedure Preheat oven to 450 degrees F. No mater how you spell it, bolillos are sold through out Mexico. Bolillos are a small French roll or baguette; they are believed to have been introduced to Mexico by The Boleo Mining Company, a French company which operated in Santa Rosalia, Mexico in the 1800s.  Though the mine is now defunct, but the bakery survived. With a theme of Holiday Breads, I wanted to create a new-to-us loaf though R really wanted to make his Panettone . He had even candied his own citrus last year. Still I convinced the kitchen elves to be a little bit adventurous. I steered the project towards a savory Scandinavian bread because Jake's cousin was sending us some hickory smoked Kokanee. This was my first time making and using a biga, also called a poolish. It takes a little bit longer, but made for a softer crumb. Delicious...and worth the effort! Ingredients makes 2 loaves Biga (a pre-ferment) 3 1/2 C bread flour 2 C water, room temperature 1/2 t instant dry yeast Whisk all the ingredients together and allow it to stand for at room temperature for between 6 and 36 hours; mine fermented for over 24 hours.
