Off-to-High-School Crêpes


So, I guess back-to-school crêpes are a thing. At least in my house. And, it's no mystery why my kids think they live in a restaurant. Here was our conversation at Trader Joe's last night...

D: Since it's my first day of high school, may I request some food?
C: Sure.
D: I would like crêpes for breakfast.
R: - with fresh peaches and whipped cream!
D: Yes! With fresh peaches and whipped cream!!
R: And BLTs for lunch...I get to request, too, right?
D: And rack of lamb rubbed with Middle Eastern spices for dinner.


HAPPY BACK TO SCHOOL!! And I was really tickled to see a comment from a high school friend that they make my recipe every week. She wrote, "Yep, all true. Even the dogs look forward to Crêpe Monday! I've shared your recipe with so many people because so easy and great." I love that! Thanks, Annie.

The crêpe part stays the same...mostly. I did add in a few more spices this time. The fillings change based on what I have...and what's requested.


Ingredients
  • 1-1/2 C all-purpose flour
  • 3 eggs
  • 2 C organic whole milk
  • dash of ground cardamom
  • dash of ground ginger
  • dash of ground cardamom
  • dash of freshly ground nutmeg
  • butter, for cooking
  • For serving: unsweetened whipped cream, fresh sliced peaches, fresh golden raspberries, organic powdered sugar, lemon wedges, and cheese (for any savory lovers!)

Procedure
Whisk all of the ingredients together until lump-free. Let sit for at least 20 minutes. Heat a large flat-bottom pan and rub the bottom with butter. Pour the batter in the middle of the pan and quickly make a tilting motion to distribute the batter all over the pan. The goal: have as thin a batter layer as possible.

Cook until the crêpe is a bit stiff and flip over, cooking for another minute The pancake should be lightly browned on both sides. Repeat till all the batter is used; I made 10 crêpes with the quantities listed.

I did eventually get a smile.


And they're off...finally at the same school again. I can't believe I have two high schoolers.

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems ! This I did last night for an upcoming recipe challenge that requires I include radishes. Ummmm...of course I'm pickling them!
