Braided Challah #CooktheBooks

This month - and last - the  Cook the Books  group has been reading Midnight Chicken  by Ella Risbridger. Debra of  Eliot's Eats  is hosting. Read her invitation here . I am getting this in just under the wire. Phew. On the Page This is a poignant memoir that attests to the healing power of cooking and  was not at all what I expected. It’s a cookbook filled with life events, milestones, and highlights the importance of stability and comfort. This is Risbridger's life full of recipes to sooth a troubled soul.  When we meet Ella, she is depressed and suicidal. The recipes give her something to live for and were so inspiring. Before she even starts, she offers three things to remember: salt your pasta water; if in doubt, butter; and keep going! I tried several of her recipes including Tipsy Amaretto Squash Soup, Trashy Ginger Beer Chicken, and Needs Using Up Minestrone. But the recipe I am sharing for this post is something I've never attempted: chal...

Homemade Greek Pita Breads

We make a lot of homemade bread. Sweet breads. Savory breads. You name it, I've probably tried it. Sourdough boules are always made in pairs and often cooling on my countertop. On the savory side of the bread world, we have made naan , bolillos , hamburger buns , and more. But, until this weekend, I have never made pita pockets. Since our local Greek fest was canceled, again this year, due to COVID concerns, we decided to have our own festival. And R came home early from his day trip to Santa Cruz to help me make pita and kourabiedes for the dinner. I read and researched before deciding on this process. Also, I cooked the pita on a hot skillet on the stovetop, but many recipes suggested baking on a hot stone in the oven. I will have to try that another time. But it was so rewarding to see these puff up on the skillet in front of my eyes! I doubled this recipe, but still made them in separate bowls Ingredients makes 8 pita 1 cup warm water 1 Tablespoon active dry yeast 1 teaspo...

Yeah, I almost gave up then and there. But I soldiered on and came  up with a bread that made me smile. First, here's the line-up of the #BreadBakers surpris...

Bolillos #BakingBloggers

Somehow I missed the prompt for this month's Baking Bloggers. But I saw that Sue of Palatable Pastime was doing the preliminary HTML and she said she could add me. That was enough of a push. I added bolillos to the title list and made the dough before we headed to get shots in arms for my husband and our kids. Grateful for the COVID vaccine and looking forward to being able to see some friends in real life! When I got home, the dough was risen and I was able to bake these for lunch. Perfect timing! The theme for this month is 'Baking of Mexico.' Here's the line-up...  Baked Pork Enchilada Salsa Verde Casserole from Sneha's Recipe Bolillos from Culinary Adventures with Camilla Capirotada de Leche from Palatable Pastime Cheesy Corn Dip from Magical Ingredients Chicken Chili Tortilla Casserole from Food Lust People Love Mexican Chicken Bake (DASH Friendly) from A Day in the Life on the Farm Tacos De Jocoqui (Sour Cream Tacos) from S...
