Lemon Olive Oil Waffles

This morning I was inspired to make something with some of my WeOlive bounty. More on that soon; we just got back from the Paso Robles Olive Festival. But I had a bottle of lemon olive oil calling my name, so I whipped up some lemon olive oil waffles with a nutmeg-scented whipped cream and fresh blueberries. Yum.


  • 2 C white whole wheat flour
  • 2 t baking powder
  • 1 egg
  • splash of pure vanilla extract
  • dash of ground nutmeg
  • dash of ground cinnamon
  • 4 T lemon olive oil
  • 1-1/2 C milk

Place all the dry ingredients into a mixing bowl. Add the wet ingredients and stir till just moistened. Cook in your waffle-maker according to its directions.
