Dragonfruit Salad

Dragonfruit looks really cool. Here's a brief introduction to the dragonfruit. Earlier this week, I folded them into Dragonfruit Waffles, but the reviews at my table were mixed. "They are cool looking, but they don't taste like anything really."

Hmmm...I decided to make a savory dish instead and this one was met with rave reviews. The biggest one even declared it 'red book-worthy.'

I am almost loathe to call this a recipe. But, if you ever end up with dragonfruit and are wondering that to do with it. This is a good thing to make.

Ingredients serves 6

  • 3 dragonfruit, scooped out and cubed with the outside kept as the serving bowl
  • 1 tomato, cubed
  • pinch of salt
  • 1 T freshly squeezed lemon juice
  • 1 T olive oil
  • 2 T fresh cilantro, chopped
  • 1 t fresh mint, chopped

In a mixing bowl place the cubed dragonfruit and tomatoes. Sprinkle with salt and drizzle with lemon juice and olive oil. Toss gently and fold in cilantro and mint. Spoon into dragonfruit "bowl." Let stand for 5 minutes before serving.
